Throw it all in the slow cooker for those lazy days—especially in the summer when none of us want to turn on our ovens! We have already mentioned how incredibly easy and quick this recipe is to put together, but it's also great for your budget! While the roast may cost a little bit up front, this recipe will yield multiple meals and can potentially last all week. Add leftovers to soups, stews, turn it into tacos or throw it on top of a salad. It's multi-purpose—sounds like a win in our book!

  • 1 roast of your choice
  • Carrots
  • Potatoes, roughly cut
  • 2 onions, cut in half
  • Onion soup mix
  • Water

Instructions

  • Add roast to the slow cooker then add all veggies and potatoes.

  • Mix the onion soup mix with 2 cups of water and pour on top of the roast.

  • Cover and cook on low for 8-10 hours, or until tender and delicious!

Notes

Build this recipe using what you have and what your family likes! Family loves potatoes? Only have a few carrots? Have some extra veggies you want to dice and throw in? It'll all taste delicious!

Leftovers? Store them in an airtight container in the fridge for up to a week or freeze them! Store in a freezer bag and get as much air out as possible. Thaw overnight in the refrigerator when you're ready to eat.

    I love to make pot roast too! My favorite way to make it is to put Lipton onion soup mix and a packet of ranch dressing mix in a measuring cup, then add water and stir it all together. Pour that over the roast, then add a stick of butter and about 5-9 whole peperoncini peppers to it. Cook it all day, then remove the peppers before you serve it. Yum!!

    Pork roast in the crockpot, pour over a can of mushroom soup, could use homemade substitute. Cover, cook low all day. Serve over mashed potatoes or rice, add favorite veggies.

    You should try adding about a fourth of a cup or aonof balsamic vinegar. It makes the beef more tender and gives it THE best flavor. I’m not even joking. Every person that has ever tried it has loved it and asked for the recipe. It is the exact same as yours but with the balsamic ??????

    We were given some frozen chuck roast and I immediately remembered Jordan mentioning this easy recipe a few years ago. I had all the ingredients and started it at 7 am on a Sunday. I used beef broth with the soup mix and thickened the extra sauce/liquid with cornstarch to make a gravy. So easy, cheap and delish!
