Ingredients

  • 2 slices bacon diced
  • 6 large eggs
  • 1 avocado halved, seeded and peeled
  • 2 tablespoons chopped fresh cilantro leaves
  • 1 tablespoon freshly squeezed lemon juice
  • Zest of 1 lemon
  • 1⁄8 tsp teaspoon salt
  • 1⁄4 tsp pepper
  • 2 tablespoons finely chopped red onion
  • Optional: cayenne pepper

Instructions

  • Cut hard boiled eggs in half.

  • Scoop yolk out of center of eggs.

  • In a small bowl, combine yolks, avocado, lemon juice, lemon zest, salt, pepper, and red

  • onion. Use a fork to mix.
