Ingredients
- 2 slices bacon diced
- 6 large eggs
- 1 avocado halved, seeded and peeled
- 2 tablespoons chopped fresh cilantro leaves
- 1 tablespoon freshly squeezed lemon juice
- Zest of 1 lemon
- 1⁄8 tsp teaspoon salt
- 1⁄4 tsp pepper
- 2 tablespoons finely chopped red onion
- Optional: cayenne pepper
Instructions
Cut hard boiled eggs in half.
Scoop yolk out of center of eggs.
In a small bowl, combine yolks, avocado, lemon juice, lemon zest, salt, pepper, and red
onion. Use a fork to mix.
Using a spoon, add a tablespoon or two of yolk mixture to the center of the egg white.
Place small crumbles of bacon on top of each avocado deviled egg.
Dust top of egg with cayenne pepper.
